If you enjoyed watching Masterchef South Africa and want to replicate some of the amazing dishes that the contestants, judges and guests prepared, then you will enjoy this book.
I found some of the recipes to be a little “cheffy”, being long and complicated, with many steps. And example is the intricate chicken liver and truffle stuffed artichokes prepared by the incomparable Michel Roux.
But there are also recipes for really simple dishes like the spicy mango chicken prepared by Ilse (see below).
With a new season of MasterChef starting shortly, it will be interesting to compare how different the new contestants’ recipes will be to what the previous top 18 finalists did.
SPICY MANGO CHICKEN
Serves 4
2 mangoes, juiced
5 cloves of garlic, crushed
5ml cayenne pepper
5ml ground cinnamon
5ml ground cumin
180ml coconut milk
10ml salt
7.5ml pepper
juice of 2 limes
1.8kg chicken pieces
Mix all the ingredients except the chicken together in a flat container. Add the chicken, cover and marinate for 3-5 hours.
Braai over moderate coals for 20-25 minutes or until browned and cooked through. - The Star
